Zucchini is a member of the summer squash family and is native to the United States and Mexico. Over the years, it has become a staple to many North American gardens in the warm months of the year. As most gardeners know, Zucchini is plentiful! We have found an abundance of ways to consume it including baking or roasting it in the oven.

  • A quick topping can be created for these Baked Zucchini Slices by combining breadcrumbs, parmesan cheese, fresh herbs, and olive oil. I prefer just using the grated cheddar as noted in the recipe below!

Step By Step Instructions:

  1. Preheat the oven to 350 degrees F.
  2. Pour 2 – 3 Tbsp of Vegetable Oil in the bottom of an 8 x 8 inch baking dish.
  3. Wash and slice your zucchini into 1/4 inch slices and arrange them overlapping in the bottom of the baking dish.
  1. Add those spices!!! Sprinkle your Zucchini Slices with 1/4 tbs of Kosher or pickling salt and 1/2 tbs of ground black pepper.
  2. Next, you top off your Baked Zucchini Slices with 1/2 tbs of Paprika and 1/2 cup of grated cheddar cheese!
  1. Place in oven and bake for 30 – 35 minutes. Boom! Your delicious side dish of Baked Zucchini Slices is complete!
